A brief history of Japanese street food

Street food vendors in Japan are known as Yatai and while in the past they would mostly be seen at festivals or events in Japan they have been less common on the streets. However throughout history there have been certain exceptions to this such as the 'Nakasu Distric" in Fukuoka, the street stalls of Osaka or the back alleys surrounding Shinkansen stations in many major cities throughout Japan. Fortunately this is now changing in Japan as many young chefs are following the world wide

trend and opening food cars!

Dozo is a culmination of all these places, from the Yatai to the back alleys, delicious food can be found anywhere in Japan. One of the best sandwiches I've ever ate came from a 7-11  (Kobini) at 1am. Here at Dozo we strive to recreate some of the best food you probably haven't had yet.
